Abstract: This study aimed to identify and quantify antioxidants in selected fruits and vegetables using high-performance liquid chromatography (HPLC). A total of six samples, including blueberries, strawberries, spinach, kale, broccoli, and carrots, were analyzed. The results revealed that blueberries had the highest concentration of total phenolic compounds, followed by strawberries and spinach. Meanwhile, carrots had the lowest concentration of total phenolic compounds among the samples. The major identified antioxidants in the samples were chlorogenic acid, catechin, and epicatechin.
